Brazil Yoshimatsu — Chapada de Minas
This Natural lot comes from Fazenda Riacho das Varas, where the Yoshimatsu family has grown coffee since 1975. Ricardo Yoshimatsu continues the family tradition, focusing on specialty production and the particular character of Brazil's emerging Chapada de Minas region.
Cherries are carefully harvested and slowly dried using controlled drying systems to preserve sweetness and consistency. The region's cool climate and varied landscape encourage slow maturation, which is exactly where the depth in this cup comes from.

How to Brew It
An espresso built for comfort. Expect a dense, syrupy shot with dried fruit sweetness and a long caramel finish, and enough body to carry through a latte without disappearing. It also makes a superb Moka pot or French press brew when you want something warming rather than bright.
Choose Your Grind
-
Whole Beans — freshest flavour, grind just before brewing
-
Ground for Espresso (Fine) — ready for your espresso machine or Moka pot
-
Ground for AeroPress (Medium) — versatile; works for AeroPress and pour-over
-
Ground for Filter (Coarse) — ideal for V60, Chemex, or batch brew
